


I found myself not making homemade biscuits as much as I would have liked because I never had self-rising flour or buttermilk on hand. Then I realized I didn’t necessarily need those ingredients, and I already had everything that I needed in my pantry. All I needed was some baking powder (a lot of it actually) and vinegar. Now these biscuits are a regular on weeknights! I used to be a little intimidated to make them, thinking they took too much time, but you can actually whip them up in a jiff!
Sidenote: I avoid chilling the dough by using cold dense butter (I use Land-O-Lakes), and cold buttermilk!
buttermilk biscuits
4 Cups all-purpose flour
4 Tablespoons baking powder (This is not a typo :/ normally biscuit recipes call for self-rising flour which has baking powder and salt added. Since we are using all-purpose flour we will need to add quite a bit of baking powder)
1 Teaspoon salt
1 Teaspoon baking soda
3 Sticks of cold butter (I use a more solid dense butter, like Land-o-lakes. I’ve tried the grassfed Kerrygold butter before and the its too soft and give the dough the wrong consistency)
2 cups of buttermilk (I normally use 2 cups whole milk and 2 Tablespoons of vinegar because I don’t keep buttermilk on hand.)
- Preheat the oven to 400 degrees. In a large bowl, or Kitchen Aid mixer with hook attachment, I add the flour, baking powder, salt, and baking soda and give a good mix to combine.
- Cut the 3 sticks of cold butter into fourths and then into little 1/2 inch squares (the smaller the better). Then add them to the flour mixture and give a good mix.
- Keep mixer running on low speed and add the buttermilk in slowly. Mix until very well combined, you may need to use your hands to make sure all the flour is incorporated. The dough will be a bit of a tacky consistency (If using a Kitchen-Aid mixer with hook, the dough will ball up a bit.)
- Transfer dough to the countertop and flatten the dough until it is about 1/2 inch thick (If you would like layers in your biscuits fold the dough in half and flatten to 1/2 inch thick, then fold the dough in half the other way and flatten to 1/2 inch thick for the last time.)
- Take your biscuit cutter (I found a set at Target) and cut your dough into biscuits. If you don’t have a biscuit cutter just cut them into squares. Transfer the biscuits onto a baking dish/sheet lined with parchment paper.
- Put into the oven and bake for 20 minutes. Then, let them cool!
